Koji coffee is coffee that has been fermented with koji, an ancient fungus that breaks down starches into sugars. The process can produce a coffee with a complex, fruity flavor profile.

how its made ?

1) Apply koji mold to coffee cherries

2) Ferment for about 60 hours in certain temperature

3) The mold breaks down starches into sugars and amino acids
