From Cherry Selection to Exceptional Coffee

Exceptional coffee begins with exceptional fruit.

At PKC Kudiraipanjan Estate, exceptional coffee begins with exceptional fruit. For every processing method, we carefully select only fully ripe coffee cherries, hand-picked by our experienced and highly trained harvest team.

Throughout the harvest season, we closely monitor the sugar content (Brix) of the cherries to ensure optimal maturity and quality. We consistently maintain an average Brix level of 25, allowing us to produce coffees with outstanding sweetness, complexity, and flavor potential.

Immediately after harvesting, the cherries undergo a meticulous sorting process. Underripe, overripe, damaged, and defective fruits are removed to ensure that only the finest cherries continue to the next stage. The selected cherries are then placed in flotation tanks, where floaters and insect-damaged cherries are separated and discarded.

This rigorous selection and quality-control process forms the foundation of every lot we produce. Once these essential steps are completed, the cherries are processed using a range of carefully crafted methods, each designed to enhance and express the unique characteristics of the coffee.

From traditional washed and natural processes to innovative fermentation techniques, every batch is handled with precision, passion, and a commitment to excellence.
